Mix-and-match include/exclude filters in spend analysis (categories, merchants, individual transactions)

Add the ability to filter out specific transactions from spend analysis.

The broader need: I want to understand where all my money went last year. I'd basically want to continue filtering out expenses I've "accounted for" — which may be entire categories, but may also be individual or recurring expenses. For example, if I have regular donations, I want to exclude those but keep the one-off / non-recurring ones.

Or: I want to exclude all transactions from my neighborhood grocery store (specific merchant), but keep the rest of my grocery spend, which would typically indicate more exotic items.

Today there's a way to look by merchant or by category, but not to mix/match categories and merchants.

Caveat: this isn't a very well thought out feature request — will keep thinking about exactly what I want here.
