Custom categories and subcategories

Allow users to define their own categories and subcategories. The default taxonomy doesn't always have the right bucket — e.g., bakeries, bubble tea shops, and other niche merchants don't fit cleanly into existing categories.

    For one-off bucketing (like bakeries or bubble tea shops), we just shipped tags — you can now add custom tags to any transaction. More tagging capabilities (reuse, analytics by tag, etc.) coming soon.

    Custom categories/subcategories proper is still on the list — tags are a faster step toward closing the gap.
